Ingredients

• 1 lb. bacon, cut into ½” pieces
• 1 medium yellow onion, diced
• 3 garlic cloves, minced
• 4 cups chicken broth
• 2 cups diced red potatoes
• 1 24 oz. jar Paisley Farm Cowboy Caviar
• 1 tsp. Italian seasoning
• ½ tsp. salt, or to taste
• ½ tsp. black pepper, or to taste
• 1 ½ cups half and half
• 4 tbsp. flour
• 2 cups shredded cheese, plus more for garnish (I used 1 cup cheddar and 1 cup pepperjack)
• Thinly sliced green onions for garnish (optional)
