Maple Sugar Carrot Cake | Kids | Maple from Canada
Maple sugar is a perfect substitute for the run-of-the-mill refined white stuff. It adds a wonderful flavour to your carrot cake, as well as the mascarpone icing!
Ingredients
- 205 g (1 1/2 cup) all-purpose flour
- 5 g (1 teaspoon) baking powder
- 1 pinch of salt
- 3 eggs, separated
- 250 ml (1 cup) maple sugar
- 125 ml (1/2 cup) olive oil
- 500 ml (2 cups) carrots, grated
- 3 g (1 1/2 teaspoon) ground cinnamon
- 50 g (1/2 cup) walnuts, chopped
- 190 ml (3/4 cup) 35% whipping cream
- 20 g (2 tablespoons) maple sugar
- 1 container (275 g) mascarpone, at room temperature
- 15 ml (1 tablespoon) amber or white rum (optional)
