St. Kitts and Nevis: Goat water stew - Explorers Kitchen
Savory and hearty Goat Water Stew brings the taste of the Caribbean islands home to your table. Start playing some reggae, because it's time to eat!
Ingredients
- 4 lbs (1.8kg) cubed bone-in goat meat
- 3 Tablespoons pork fat, palm oil, coconut oil, or peanut oil
- 1.5 quarts (1.5l) Chicken or beef stock
- 1 teaspoon salt
- 1.6 lbs (.73kg) papaya (about ½ of a fruit), cubed
- 1 large onion, diced
- 6 hot Thai chilies
- 14 oz (411g) can diced tomatoes
- 1.5 Tablespoons flour
- 1.5 Tablespoons cold water
- 1 Tablespoon Gravy Browning (see notes in article above)
- For the bouquet garni (tie with string, see notes in article above):
- 3-4 sprigs of thyme
- 3-4 sprigs of parsley
- 2 bay leaves
- For the Dumplings
- 2 cups (250g) flour
- 1 Tablespoon baking powder
- ½ teaspoon salt
- 4 Tablespoons butter
- 2/3 cup (157ml) buttermilk (or whole milk)
