• 6 brioche rolls or buns or rolls
• 2 celery stalks, diced
• 2 spring onions, thinly sliced
• 2 tbsp chives, finely chopped
• The juice of half a lemon
• 1 tsp paprika
• Salt and pepper to taste
• MAYONNAISE
• 4 large free range egg yolks, room temperature
• 4 tbsp verjuice
• 2 tsp dijon mustard
• 235ml good quality olive oil
• 125ml vegetable oil
• TO SERVE
• Finely chopped chives
• Micro herbs
• Lemon wedges
• Sea salt potato chips
