- 4-5 Tbsp of your favorite BBQ sauce
- 1 medium red online, sliced
- 8-12 oz of shredded mozzarella (more to taste)
- 2 ears of sweet corn, kernels removed (OR make pickled sweet corn recipe)
- cilantro for topping after bake
- ranch dressing for optional topping after bake
