Ingredients

  • 1/4 cup (75g) whole-egg mayonnaise
  • 3 tsp sriracha or other chilli sauce (optional)
  • 2 short baguettes, ends trimmed, halved crossways
  • 2 baby cucumbers (qukes), cut into batons
  • 1 carrot, julienned
  • 1 green onion, cut into 5cm lengths
  • 8 large fresh coriander sprigs
  • Lemongrass beef
  • 300 grams beef porterhouse or rump steak, fat trimmed, sliced thinly on the diagonal
  • 1 tablespoon fish sauce
  • 1 stalk fresh lemongrass, white part only, chopped finely
  • 1 clove garlic, crushed
  • 1 tablespoon vegetable oil
  • 1 red shallot, halved, sliced thinly
  • 2 teaspoons white sugar
