Ingredients

• 1 ½ cups diced onions
• ¾ cup each diced carrot and celery
• 2 Tbsp. olive oil
• 1 Tbsp. each minced fresh garlic and thyme
• ½ tsp. red pepper flakes
• 8 cups low-sodium chicken broth
• 1 cup dry orzo pasta
• 4 cups diced cooked turkey or chicken
• 1 pkg. fresh baby spinach (5 oz.)
• 1–2 Tbsp. minced lemon zest
• 3 –4 Tbsp. fresh lemon juice
• Salt to taste
• Crumbled feta cheese
