• 2 Sweet Potatoes peeled and cubed
• 1 Onion thinly sliced
• 1 Lemon Grass stalk
• 1 cup Coconut milk
• 1 teaspoon Thai Red Curry Paste
• 1/4 teaspoon Turmeric powder (Haldi)
• 1 tablespoon Coconut Oil
• Salt to taste
• 4 cloves Garlic
• 1 Onion or 10 shallots
• 1 inch Ginger
• 1/2 inch Fresh turmeric root or 1/4 teaspoon turmeric powder
• 2 Green Chillies
• 5-6 Roasted Peanuts (Moongphali) crushed
• Coriander (Dhania) Leaves finely chopped
