New York Style Sloppy Joe Hot Dog  - Bryant and May Matches

• 350g beef mince 20% fat content
• 1 white onion, peeled and diced
• 2 cloves of garlic, chopped
• 1 tsp cracked black pepper
• 1 tbsp tomato puree
• 100ml beef stock
• 100ml red wine
• 150g chopped tin of tomatoes
• 1 tin of drained pinto or kidney beans.
• 20g bitter dark chocolate
• 2 limes for juicing
• 3 tbsp coriander, chopped
• 4 jumbo sausages (choose your favourite)
• Vegetable oil
