Chicken Kiev - Chicken Farmers

Ingredients

• 4 chicken breasts, skinless, boneless
• 1 cup (250 mL) brown rice flour
• 2 eggs, beaten
• 1 cup (250 mL) almonds, coarsely crushed
• 1 tbsp (15 mL) olive oil
• 1 tbsp (15 mL) butter
• 1/4 cup (60 mL) butter, softened slightly
• 2 shallots, large, minced
• 2 garlic cloves, minced
• 2 tbsp (30 mL) parsley, minced
• 2 cups (500 mL) baby spinach
• 1 tsp (5 mL) butter
• salt and pepper to taste
