• 1.5 kg oxtail
• 2 T flour
• 3 T oil
• 1 large onion, chopped
• 2 t garlic, minced
• 2 carrots, roughly chopped
• 2 tomatoes, chopped
• 2 bay leaves
• 4 sprigs thyme
• 1 T sugar
• 1 1⁄2 cups red wine
• 1 cup beef stock
• sea salt and freshly ground black pepper, to taste
• 8 Supersweet Sweetcorn, halved
• rice, pap or mashed potato, for serving
