• All-purpose flour, for rolling
• 1 cup packed light brown sugar
• 5 tbsp quick-cooking tapioca
• 2 tsp orange zest
• 1⁄2 tsp ground star anise
• 7 cups frozen blueberries, preferably wild
• 3 tbsp balsamic vinegar
• 1 tbsp unsalted butter, cut into small pieces
• 1 whole egg whisked with 1 tbsp water, for egg wash
