Ingredients: 700g topside of beef; 3 tbsp oil, divided; To taste salt and freshly ground black pepper; 1 tsp thyme leaves; 1 tsp mustard powder; 250ml beef stock; 500g King Edward potatoes, peeled and cut into 5cm even sized pieces; 24oz topside of beef; 8fl. oz beef stock; 17oz King Edward potatoes, peeled and cut into 5cm even sized pieces; Step 1 Brush beef with 1 tablespoon oil, season with salt, pepper, thyme leaves and mustard powder; Step 2 Add 250ml stock to bottom of pot. Push in the legs on the Cook & Crisp tray, then place the tray in the bottom position in the pot. Add the beef; Step 3 Brush potatoes with 1 tablespoon oil and season with salt. Place around beef on tray; Step 5 When cooking is complete, remove beef and leave to rest covered in foil
