Sweet Potato Lentil Stew With Tuna - Nonna Pia's

Ingredients

• 3 tbsp coconut oil
• 1 yellow onion, diced
• 3 cloves of garlic, minced
• 1 1-inch piece ginger, minced
• 3 stalks of celery, diced
• 2 large carrots, diced
• 2 tbsp curry powder
• 2 tbsp tomato paste
• 3 sweet potatoes, peeled and cut into 1-inch cubes
• 1 cup dried green lentils, rinsed
• 4 cups vegetable stock
• 1 jar (660ml) Nonna Pia’s Siciliana sauce
• 2 cans (170g) Ocean’s Flaked Albacore Tuna , drained
• 4 cups spinach
• 1 cup cilantro, to garnish
• ½ cup plain yogurt, for serving
• Salt and pepper to taste
