Ingredients

• 2 tbsp canola oil
• 1 medium onion, chopped
• 2 medium carrots, peeled and chopped
• 2 celery stalks, chopped
• 1 bay leaf
• 1 garlic clove, minced
• 1½ tsp curry powder
• 2 cups dry green lentils, rinsed
• 2 medium sweet potatoes, peeled and cut in ½”dice
• 9 oz frozen cut green beans
• 14.5 oz diced tomatoes in juice
• ½ cup cilantro leaves, chopped
• plain low fat yogurt for serving
• coarse salt and black pepper
