Ingredients

• 🍗 4-5 chicken thigh fillets, cut into bite-sized pieces
• 🧅 1 small onion, finely chopped
• 🧄 2 garlic cloves, finely chopped
• 🌿 2-3 tbsp green pesto
• 🍅 3-4 plum tomatoes or 10-12 cherry tomatoes, chopped
• 🍋 Squeeze of lemon
• 🌱 1 small handful fresh basil
• 🫒 1 tbsp olive oil
• 🧂 Salt and pepper
• 💧 Splash of water
• 🍚 Steamed rice for 3, to serve
