- 3/4 cups of malt vinegar
- 1/4 cup of molasses
- 2 spoons of honey
- 1 teaspoon of fennel seeds
- 1/4 teaspoon crushed red chili flakes
- 10 whole black peppercorns
- 1 piece of cinnamon stick
- 1/2 bay leaf
- 1/2 cup brown sugar
- 1/3 cup of salt
- 1/4 cup of malt vinegar
- 8 sprigs of fresh thyme
- 4 bone-in chicken breasts, cut into quarters
- Freshly ground black pepper
- 2 tablespoons of vegetable oil
