Pickled Quail Egg & Potato Salad | Spring Creek Quail Eggs

Ingredients

• 1 lb medium red potatoes (about 5), scrubbed clean
• 2 tsp salt
• 1 bag of pickled quail eggs
• 6 tbsp white wine vinegar
• 2 tbsp dijon mustard
• 2 tbsp honey
• 2 tbsp chopped fresh dill
• 1 tbsp chopped fresh chives
• Salt and pepper to taste
• Pinch of paprika
• 1/4 red onion, thinly sliced
• 1 celery stalk, diced
• 2 pickle spears, diced
• Microgreens
• 6 slices of sourdough, toasted
