Ingredients

  • 75ml olive oil
  • 4 cloves of garlic, crushed
  • 1 shallot, peeled and diced
  • 4 star anise
  • 1l San Marzano tomatoes, blitzed
  • 10 large prawns, peeled
  • 250g clams
  • 250g mussels
  • 500g salmon, cut into 6
  • 100ml white wine
  • 1 small bunch parsley, chopped
  • Heat a third of the oil in a large pan and add the garlic, shallot and star anise. Pop in tomatoes, bring to the boil, then simmer for 5 mins.
  • Add the prawns, mussels, clams and salmon, followed by the wine. Once bubbling, add the rest of the oil, then season, pop the lid on and cook for 5 mins.
  • To serve, sprinkle over parsley and drizzle in more oil if desired.
