Cioppino - James Martin Chef
Cioppino is an Italian American seafood stew made with tomatoes and wine. Often made with the catch of the day it is a rustic dish.
Ingredients
- 75ml olive oil
- 4 cloves of garlic, crushed
- 1 shallot, peeled and diced
- 4 star anise
- 1l San Marzano tomatoes, blitzed
- 10 large prawns, peeled
- 250g clams
- 250g mussels
- 500g salmon, cut into 6
- 100ml white wine
- 1 small bunch parsley, chopped
- Heat a third of the oil in a large pan and add the garlic, shallot and star anise. Pop in tomatoes, bring to the boil, then simmer for 5 mins.
- Add the prawns, mussels, clams and salmon, followed by the wine. Once bubbling, add the rest of the oil, then season, pop the lid on and cook for 5 mins.
- To serve, sprinkle over parsley and drizzle in more oil if desired.
