Creamy White Bean and Chicken Soup – Homesteadin' In The City

Ingredients

• 3 chicken breasts, diced into roughly 1 inch pieces
• 4 cups of white beans (Navy or Cannellini)
• 2 Tbsp olive oil
• 1 yellow onion, diced
• 1 stalk of celery, diced
• 3 carrots, diced
• 3 garlic cloves, minced
• 28 oz chicken broth
• 1/4 cup heavy cream
• 1/4 cup bean broth
• 1.5 tsp ground cumin
• 1 tsp smoked paprika
• 1/4 tsp Cayenne pepper
• 1 tsp plus 1/2 tsp white pepper
• 4 tsp salt
• 1/4 cup cilantro, chopped
• 1 Tbsp all-purpose flour (if you need this to be gluten-free, sub the flour with 2 tsp of corn or potato starch)
