Seafood Quesadillas – Broil King

Ingredients

• 1 tin diced green chilies, drained
• 1/4 cup mayonnaise
• 4 green onions, finely diced
• 1 tbsp fresh cilantro, chopped
• 4 oz monterey jack cheese, grated
• 1/3 cup sweet onions, finely diced
• 1/2 tsp ground cumin
• 1/2 tsp ground coriander
• pinch cayenne pepper
• 2 tbsp lime juice
• zest of one lime
• 2 tsp salt
• 1 tsp pepper
• 1 lb cooked seafood (shrimp, crab, lobster), squeezed very dry
• Large flour tortillas 8
• Salsa of choice
