Ingredients
- 4-6 skinless, boneless chicken thighs
- 1 x 400g can of butter beans, drained
- 3 medium leeks, chopped
- 2 tsp of frozen chopped garlic
- 1 handful of fresh tarragon leaves, finely chopped (or 1 tsp of dried tarragon)
- Juice of 1 lemon
- 1 tbsp of olive oil, plus extra for drizzling
- Salt
- freshly ground pepper
- 8-10 cherry tomatoes
