Ingredients

• buttery cooking spray
• 2 large whole eggs
• 1/2 cup low-fat Parmesan cheese, grated
• 1/2 cup toasted wheat germ
• 1 tsp. Italian seasoning
• 1/4 tsp. garlic salt
• 1 medium eggplant (About 1 1/4 pounds.)
• 1 cup of marinara sauce, warmed
