Mini cheesecake bites with a chocolate crumb crust and creamy ricotta-cream cheese filling, perfect for sharing or dessert sampling!
Ingredients
- 2/3 cup finely crushed chocolate cookies (I used chocolate animal crackers)
- 2 tbsp. butter, melted
- 1/2 cup ricotta cheese
- 4 oz. softened cream cheese
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 eggs
