Chocolate Strawberry Shortcakes – Catskill Animal Sanctuary

Ingredients

• 1 quart fresh strawberries, hulled and quartered, about 3 cups
• 2 tablespoons granulated sugar
• Zest of one lemon
• 1 cup non-dairy milk
• 1 tablespoon fresh lemon juice
• 1 teaspoon vanilla
• 2 cups unbleached all-purpose flour
• ½ cup cocoa powder
• ½ cup granulated sugar
• 1 tablespoon baking powder
• ½ teaspoon baking soda
• 4 tablespoons solid coconut oil or vegan butter chilled and cut into pieces
• 1 container vegan whipped cream (like CocoWhip™) or 1 recipe of our coconut whipped cream
