- 2 tbsp. extra-virgin olive oil
- <sup>1</sup>⁄<sub>2</sub> cup loosely packed salad greens, such as arugula
- 1 small carrot, peeled into thin strips with a vegetable peeler
- <sup>1</sup>⁄<sub>8</sub> tsp. ground cinnamon
