Ingredients

• 4 tbsp. olive oil
• 1 eggplant, sliced
• 1 brown onion, sliced
• 4 cloves garlic, crushed
• 1 red capsicum, sliced
• 1 zucchini, sliced
• 4 sprigs thyme
• 80 g kalamata olives, pitted and sliced
• 1 tbsp. capers
• 3 tomatoes, sliced
• Salt and black pepper, to taste
• 1/4 bunch basil
• 1 2/3 cups (150 g) Perfect Italiano™ Perfect Bakes cheese
• 100 g lasagne sheets
