Ingredients

  • 4 cups broth (Imagine No-Chicken Chicken Broth)
  • 6 cups water
  • 1 onion (halved)
  • 3 cloves garlic (smashed)
  • 1 inch galangal (cut into 4-5 pieces)
  • 1 lemongrass (bruised* and cut into 4-5 pieces)
  • 1 jalapeño (seeds and veins removed, optional**)
  • 4 kaffir limes (stems removed and torn into large pieces)
  • 1-2 tbsp salt (adjust to taste)
  • 2 tbsp mirin ( +extra for tofu)
  • 1/4 cup low-sodium soy sauce +extra for tofu
  • 1 tbsp rice vinegar
  • 2 boxes tofu (drained and cut into 1/2 inch cubes)
  • 3 carrots (julienned)
  • 1/2 head cabbage (shredded)
  • 10 baby corn
  • 1/2 cup shelled edamame seeds
  • 3 packets Enoki mushrooms
  • 5 scallions (cut)
  • Ramen noodles, glass noodles, udon noodles, (cooked according to package directions)
