• 1/2 lb Italian sausage, casings removed

• Salt and black pepper, to taste
• 2 tbsp olive oil
• 15 oz ricotta cheese
• 1 large egg
• 2 cups shredded mozzarella cheese, divided
• 1/2 cup grated Parmesan cheese
• 2 tbsp chopped fresh parsley or 1 tbsp dried parsley
• 12 sheets Ronzoni lasagna noodles
• Extra mozzarella and Parmesan cheese for topping (about 1 cup mozzarella and 1/4 cup Parmesan)
