• 1/2 teaspoon black pepper
• 2 tablespoons unsalted butter, for browning
• 2 tablespoons vegetable oil, for browning
• 2 tablespoons unsalted butter
• 2 tablespoons all-purpose flour
• 2 cups (480ml) beef broth
• 1/2 cup (120ml) heavy cream
• 1 tablespoon Dijon mustard
• 1 tablespoon Worcestershire sauce
• Salt and pepper, to taste
