Ingredients

• 1 tbsp olive oil
• 1/2 cup finely diced onion
• 1/2 cup finely chopped celery
• 1 1/2 cups cubed Yukon Gold or waxy potatoes, peeled
• 1 cup sliced carrots
• 1/2 cup green beans, fresh, frozen or canned, drained and rinsed
• 1 14 oz. can diced tomatoes
• 1 29 oz. can tomato puree
• 32 oz Nature's Promise vegetable broth
• 1 cup cubed zucchini
• 1 bay leaf
• 1 cup uncooked alphabet pasta
• 1/2 cup corn, frozen or canned, drained and rinsed
• 2 cups baby spinach, trimmed
