Alphabet Soup - MA SNAP-ED

Ingredients

• 1 tablespoon vegetable or olive oil
• 1 yellow onion, peeled and chopped
• 2 celery stalks, sliced
• 2 carrots, scrubbed and sliced
• 1 teaspoon dried thyme
• 8 cups low-sodium chicken broth
• 1⁄2 cup alphabet-shaped pasta
• 2 cups cooked, shredded chicken, from a home-cooked or rotisserie chicken (if you like)
• pinch kosher salt
