Ingredients

• 2 cups all-purpose flour, plus more for dusting
• 1/2 cup warm water
• 1/3 cup sour cream
• 1 large egg
• 1/2 tsp salt
• 1 cup ricotta cheese
• 1/2 cup feta cheese, crumbled
• 2 tbsp fresh dill, chopped
• 1/2 tsp black pepper
• 2 tbsp unsalted butter
• 1 small shallot, finely chopped
• 1 cup baby spinach, chopped
• 1 tbsp olive oil
• 1/4 cup sun-dried tomatoes, finely chopped (in oil, drained)
• 1 egg yolk (for sealing and brushing)
