Ingredients

• 4 tsp. olive oil
• 1 boneless, skinless chicken breast, cut into very small chunks
• 1 small onion, diced
• 2 stalks celery, diced (about 1/2 cup)
• 1 medium carrot, peeled and diced (about 1/2 cup)
• 2 tsp. chopped fresh thyme or 1/2 tsp. dried
• 6 cups chicken broth
• 1 cup orzo (rice shaped) pasta
• 2 large eggs
• 3 Tbsp. fresh lemon juice
• lemon zest to garnish, if desired
