Ingredients

• 1 tbsp Extra virgin olive oil
• 1 Medium onion, diced
• 3 Garlic cloves, thinly diced
• 10 oz Mushrooms, sliced
• 1 tsp Dried thyme
• 1 cup Short grain rice, rinsed and drained
• 2 cup Vegetable stock
• 2 tbsp Butter
• 1/4 cup Heavy cream
• 1/2 cup Parsley, chopped
• Sea salt and black pepper, to taste
