Chocolate Potato Cake – Cooking for Oscar

Ingredients

• 2 Medium potatoes (enough to make 1 cup when mashed)
• 1 cup luke warm water
• canola oil spray
• flour (for dusting the cake pan)
• 1 cup plain white flour
• 1 cup plain wholemeal flour
• 3/4 cups raw cocoa
• 2 1/4 teaspoons baking powder
• 1/2 teaspoon bicarbonate of soda
• pinch salt
• 125g unsalted butter (softened)
• 1 1/2 cup caster sugar
• 1 teaspoon vanilla essence
• 4 Large eggs
• pure icing sugar
