Potato Chocolate Cake - PEI Potatoes

Ingredients

• 1 cup mashed, PEI potatoes
• 1 cup warm water
• 2.666 cup unsalted butter, softened
• 2 cup firmly packed brown sugar
• 1 tsp vanilla extract
• 4 large eggs
• 0.75 cup cocoa powder + 2 tbsp for dusting
• 2 cup all-purpose flour
• 2.25 tsp baking powder
• 0.5 tsp baking soda
• 0.5 tsp salt
• 0.75 semi-sweet chocolate chips
• 2 cup of your favourite icing
• Large flake sea salt, such as Maldon, for sprinkling
