Ingredients

• 2 cups self raising flour
• ⅓ cup bran
• ¼ cup brown sugar
• 2 tablespoons honey
• 1 teaspoon cinnamon
• ½ teaspoon mixed spice
• ½ teaspoon salt
• 2 large eggs, lightly beaten
• ½ cup vegetable oil
• 1 teaspoon vanilla essence
• 1 cup apple, grated, peeled (1 big apple or 2 small)
• 1 cup zucchini, grated, peeled (more or less 2 zucchini’s)
• Muffins
