Ingredients

  • 1 medium onion, chopped
  • 3 garlic gloves, minced
  • 2 tbsps olive oil
  • 4-5 celery stalks, chopped
  • 1-2 colored bell peppers, diced
  • 1 cup frozen spinach (or 3 cups fresh)
  • 1-2 tsp dried thyme
  • 1/2 cup fresh basil, chopped
  • 1 tbsp dried oregano
  • 1/4 tsp black pepper
  • pinch of cayenne (optional; omit if you do not want it spicy)
  • 2 tbsp nutritional yeast (optional)
  • salt and pepper to taste
  • 2 cans diced tomatoes
  • 1-2 tbsp honey
  • 1-2 tbsp dijon mustard
  • 4-5 cups cooked black-eyed peas (you can use dried beans*, canned, or frozen)
