• 4 carrots, peeled and grated
• Salt and pepper from the mill
• <strong>Vinaigrette</strong>
• 1/3 cup vegetable oil 80 ml
• 1/4 cup cider vinegar 60 ml
• 2 tbsp. maple syrup 30 ml
• 1 small garlic clove, finely chopped
• 1 shallot, finely chopped
• 1/4 cup parsley, chopped 60 ml
• Salt and pepper
