Georgia peach pie peaches: Sweet Summer - Taste Dessert

• 2 ½ cups (300g) all-purpose flour, plus more for dusting
• 1 teaspoon (5g) salt
• 1 cup (2 sticks / 226g) unsalted butter, very cold and cut into ½-inch cubes
• ½ cup (120ml) ice water
• 6-7 medium ripe peaches (about 3 pounds / 1.36kg), peeled and sliced (about 6 cups)
• ½ cup (100g) granulated sugar
• ¼ cup (30g) all-purpose flour
• 2 tablespoons lemon juice
• 1 teaspoon ground cinnamon
• ¼ teaspoon ground nutmeg
• Pinch of salt
• 1 large egg, beaten
• 1 tablespoon milk
• 2 tablespoons granulated sugar, for sprinkling
