Ingredients

• 1 onion, finely chopped
• 8 oz (227 g) white button mushrooms, finely chopped
• 2 tablespoons (30 ml) olive oil
• 1 lb (454 g) lean ground beef
• 2 cloves garlic, chopped
• 1 teaspoon (5 ml) dried oregano
• 1 teaspoon (5 ml) dried basil
• 1/2 teaspoon (2.5 ml) hot pepper flakes
• 1 package 400 g white corn chips
• 1/2 cup (125 ml) oil-packed black olives, pitted, drained and sliced
• 1 red bell pepper, seeded and diced
• 1/2 lb (225 g) cheese curds, broken into small pieces
• 3 tomatoes, seeded and diced
• Salt and pepper
• Sour cream, to taste
