Sweet Potato Pie

Ingredients

• 2 pounds sweet potatoes or yams
• 1/2 cup butter
• 1 tsp cinnamon
• 1/4 tsp ginger
• 1/2 tsp salt
• 1/4 tsp nutmeg
• 2 tbsps white sugar
• 1 cup brown sugar
• 3 large eggs, separated
• 1/2 cup orange juice
• 1 tsp grated orange rind
• 1/2 cup evaporated milk.
