Ingredients

• 2 tablespoons olive oil
• 1 bunch broccoli florets and stems, cut into 1 inch pieces
• 1 sweet onion, peeled and roughly chopped
• 3-4 cloves garlic, peeled
• 2 small yukon gold potatoes, cut into quarters
• 1 teaspoon fresh thyme leaves
• 6 cups vegetable stock or purified water
• 2 cubes vegetable bouillon, if using water (Edward & Sons Not-Chick'n or Veggie)
• sea salt
• freshly ground black pepper
• pinch cayenne pepper (optional)
