Sausage, Kale, and White Bean Soup

Ingredients

• 1 onion (diced)
• 3 organic carrots (large, chopped)
• 2 stalks organic celery (chopped)
• 4 cloves garlic (minced)
• 3 organic pasture-raised chicken sausages (sliced )
• 4 cups organic chicken stock ((vegetable broth or water works here too))
• 15 oz organic fired roasted tomatoes (canned)
• 15 oz white beans (canned, rinsed and drained (Eden Organics))
• 1 bushel organic kale (- stems removed and leaves torn into small pieces)
• 1 tbsp olive oil
• 2 tsp salt
• 2 tsp black pepper
• 1 tsp oregano
• 1 lemon (juiced)
