Sweet Potato Falafel | Rafferty's Garden

Ingredients

• 400g of sweet potato, peeled and diced
• 1/2 red onion, peeled and diced
• 2x garlic cloves, crushed
• 1 tbsp of olive oil
• 1x can of chickpeas, rinsed and drained
• 2x Rafferty's Garden Sweet Potato, Carrot & Apple
• 1/2 cup of chickpea flour (or plain flour)
• 1/2 cup of flat-leaf parsley
• 1/2 cup of coriander leaves
• Grated zest of 1 lemon
• 1 tsp of ground cumin
• 1 tsp of ground coriander
