• 2 tbsp olive oil
• 2 onions finely chopped
• 4 cloves garlic finely chopped
• 1 tbsp chipotle paste
• 2 x 400g tins peeled plum tomatoes

• a large bunch coriander finely chopped
• 3 limes juiced
• ½ red onion finely chopped
• 2 green chillies deseeded and finely chopped
