Mexican Pozole Soup

Ingredients

• 2 boneless chicken breasts
• 1 medium onion, chopped fine
• 2 cloves garlic, unpeeled
• 1 tbsp cumin
• ¼ tsp oregano
• 4–5 cups sodium-reduced chicken stock
• 2 tbsp olive oil
• ½ tbsp salt
• 4 cups canned white hominy, drained *
• 1–2 tbsp chili powder
• 1 cup lettuce, shredded
• 1 tomato, chopped
• 1 avocado, peeled and diced
• ½ cup sour cream
• ½ cup cheddar cheese, shredded
• Tortilla chips
• 2 Tbsp fresh cilantro, chopped
• 1 lime, cut into wedges
