Anchovy Pasta Recipe With Chipotle | Gran Luchito

Ingredients

• 3 tablespoons olive oil
• 1 teaspoon Gran Luchito Chipotle Paste
• 3 garlic cloves, thinly sliced
• 6–8 anchovies
• 1 tablespoon tomato purée
• 1 tablespoon red wine vinegar
• 200g / 7oz linguine or spaghetti
• 1 knob of butter
• 1 tablespoon of parsley, finely chopped
• 2 tablespoons grated Parmesan cheese, plus extra to serve
• Salt and freshly ground black pepper
