Smith Island Cake recipe by Mrs Ally

Ingredients

• 3 and ¾ cups flour
• 1 teaspoon baking powder
• 1 level teaspoon bicarbonate of soda
• ½ teaspoon salt
• 350g butter
• 2 cups sugar
• 5 eggs (Extra large, not Jumbo)
• 1 teaspoon vanilla essence
• 1 and ¾ cups buttermilk
• 85g butter
• 100g dark chocolate (We used 74% Lindt Dark, anything 40% and above is fine), chopped
• 2 teaspoons good quality cocoa powder
• 1 and ¾ cups icing sugar
• 1 tub fresh cream
• 1 tablespoon liquid glucose- you can substitute with golden syrup
